Quick recipe for Oat and raisin squares

These oat and raisin squares are the perfect after lunch treat providing lots of slow releasing energy throughout the afternoon!

Ingredients:

1 cup or small bowl raisins soaked in apple juice. Preferably for a few hours, but you can leave them for half an hour if pushed for time

300g oats

300g self raising flour

1tsp baking powder

300 ml olive oil (cooking olive oil, not extra virgin)

300 ml water. You can substitute partially for the apple juice used to soak the raisins to add a lovely apple flavour and extra sweetness to the oat and raisin squares.

200g sugar

1/2 tsp cinnamon (optional)

1/2 tsp vanilla extract (optional)

Method:

  • Combine all the ingredients in a bowl and mix well with a wooden spoon
  • Spread out fairly thickly on 2 baking stones or silicone baking sheets
  • Cook in the oven for 30-40 mins at 180 degrees C
  • Allow to cool, then cut into squares
  • Once cooled completely store in an air tight cake tin/ biscuit tin

It feels so good to make these instead of buying crisps, biscuits or plastic wrapped cereal bars. I put them in the lunchbox with our sandwiches to avoid the unnecessary plastic waste which comes with shop bought lunchbox snacks!  You control the ingredients and can lower the sugar levels if you choose. There are no preservatives and they haven’t been sitting on a shelf for months!  

This recipe makes a lot of oat and raisin squares, so half this recipe if you don’t have 2-3 people to eat them all week!
