The best Banana Tea Bread ever!

It’s been a while since I have had any overripe bananas in my house, however yesterday we had a few and I just had to rescue them.  I decided to make Banana Tea bread with them and was so pleased I did – it was delicious!
I had a look online and found a recipe on a lovely looking site My Grandma’s Recipe Box, which I tweaked, due to limited time and ingredients.
My adapted recipe for Banana Tea Bread
Ingredients:
1 3/4 cup self raising flour
1/2 cup olive oil spread
2 eggs
1 cup golden caster sugar
1 cup mashed bananas
Method:
Set the oven to 180°C
  1. Grease a loaf tin
  2. ‘Cream’ together the olive oil spread and sugar in a bowl
  3. Beat in the eggs
  4. Beat in the mashed banana
  5. Weigh the flour into a sieve over the mixture, sieve it in and stir until fully incorporated into the mixture
Pour the mixture into the loaf tin and bake for around 45 minutes in a fan assisted oven.
Easy peasy!  It didn’t take me long to mix together the ingredients and made a great snack for afternoon tea. I’ll definitely be making that again soon – just need some more overripe bananas now!
